The short grained rice is used for dishes like deserts and sushi, but sushi is not the raw fish that so many American’s have mistakenly termed it. Sushi is actually vinegared rice or rice cooked with vinegar from rice or rice wine called Saki. Raw fish that many people have come to think of as sushi is actually sashimi while sushi is the vinegared rice that is either lumped into small mounds or wrapped with seaweed or alga and sometimes has raw fish or vegetables with it.
Risotto is another rice dish that is an Italian creation that contains rice, spices and often vegetables and sometimes fish or meat. The vegetables and any meat is cooked in oil and then set aside, the rice is browned in oil and water, broth and sometimes wine is added with the other ingredients to the rice and slowly cooked.
Risotto is not an easy to dish to prepare correctly and is cooked to an al dente stage or just before being completely cooked. Al dente means “to the tooth” or “to the bite” and refers to the stage of cooking just before being fully soft and cooked through. When something is cooked al dente it still has a bite to it or is ever so slightly hard in the middle, a great way to cook vegetables and rice for full flavor and texture.
Rice is usually cooked by boiling or steaming but for regular rice it is often not easy to cook as it contains a lot of starch and tends to stick to the pot or pan. Stirring is often needed to properly cook rice and the need for constant attention has given rise to the electronic appliance of a rice cooker.
Rice cookers start by bring the water almost to a boiling point and then keeping the temperature there till the rice is done. The water is absorbed by the grains of rice and the rice is slowly heated and cooked. Once the device reaches a certain stage of the cooking the warmer will kick in and lower the temperature to keep the rice warm for several hours.

You can also steam vegetables and other items in the rice cookers as well as make various dishes like risotto and sushi rice along with other creative and interesting dishes of your own.
