The bottom of the Hotpan with its core of aluminum does allow for great heat dissipation so you have even heating and less chance to burn things. The stainless steel that is highly polished adds an almost nonstick surface to the pan that makes cooking and cleanup easy. I had no problem cooking and simmering dishes like spaghetti sauce and soups for hours for that flavorful cooking almost like a Crockpot.

The large and thick bottom allows for nice even heating so you can have the pot on the stove for hours and cook slowly for soups and sauces or boil quickly for things like noodles and pasta. The pan heats quickly but not so much that burning is a problem like on my large cast iron cookware.
The sides of the Hotpan are straight angles from the bottom so stirring and scrapping is easy with a spoon or spatula and the corners near the bottom are not so small that food gets stuck there. Using a spoon or spatula you can get the food easily out of the bottom corner to stir in the rest of the pot for an even cooking. The pans design is nice for a pot or pan for cooking dishes like sauces and soups and the sizes from 1 quart to 5 quart make a nice variation if you wish to purchase a complete set.
The pan is easy to handle with the larger handles that stay cool even when cooking at higher temperatures like boiling and you can handle them after cooking for hours at low temps or ten to fifteen minutes at higher temperatures. I have used oven mitts when cooking and used them to move the pot around as well as take off the lid and the large and tapered lid handle is east to grip with the oven mitts on.
Cooking with the Hotpan is one thing but serving with it shows the same quality and craftsmanship I have come to expect and enjoy from Kuhn Rikon. The melamine holder is a nice way to not have to search for the trivet or counter protector. The melamine holder has a nice rubber ring on the bottom for a non slip grip on the table or countertop and the pot sits nicely inside.
The area between the pan and the holder allows for a heated air pocket that will help keep the food warmer longer so you have a nice way to keep your dishes warm. The holder does a great job of keeping the food warm and an excellent way to safely serve dishes so you can pass the dish around and serve food easily.

The Kuhn Rikon Hotpan is a fantastic quality cooking pan and does a great job with a wide variety of dishes like sauces, pasta, vegetables and even soups and stews. I tried out a wide variety of dishes from simple things like boiling pasta and steaming vegetables to cooking soups and sauces and found no problems with the Hotpan. The nice aluminum core bottom allows for a nice even heating and the cleanup is very simple with the polished stainless steel.
