They have truly taken each recipe apart and through trial and error figured out the real and best way to cook each recipe. I cooked the dishes Corned Beef and Cabbage, Salmon en Cocotte with Leeks, Eggs en Cocotte and Savory Bread Pudding. I definitely have plans for more recipes as well and will cherish this book along with the previous cookbook I have from America’s Test Kitchen.

The recipes will not only tell you how they came about improving the dish but why they do the things they do such as the example I gave earlier with the Eggs en Cocotte. Eggs en Cocotte sounds like a simple recipe of dropping a couple of eggs into ramekins, adding some salt and pepper and a little cream and baking in a water bath.
With this recipe they explain that adding the cream during the cooking does not allow you to monitor how done the eggs are so you need to add the cream after. Why not do some fancy stuff with the cream and cook up some shallots and maybe even some parmesan cheese for a great topper.
They did a great job of telling you how to cook the eggs as well as how to prepare the Dutch oven for cooking them as well as when to know they are done. This recipe is very typical of each and every one in the recipe book with a detailed explanation of the method of cooking and why things come out the way they do.
Not only do they explain how to cook meat till they are tender and delicious they explain how and why the cooking method they used turns out the way it does. Every recipe has this detail for cooking like tender meats, tasty and properly cooked vegetables and mouth watering desserts and side dishes.

The Best Slow & Easy Recipes is a fantastic cookbook for the beginner and experienced cook to not only get the recipes cooked a great way but to learn about why cooking them their way works. The Slow & Easy Recipes cookbook shows the how and why of cooking in a way that is understandable and easy to perform yourself.
